Cowboy Cornbread Meatloaf
This is one of the best easy weeknight dinners, hands down. I was watching Food Fighters last night and have to say that this Cowboy Cornbread Meatloaf recipe is inspired by cowboy chef, Kent Rollins! I had a package of ground beef in the fridge that needed to be eaten or destroyed by today, and didn’t feel like doing the run-of-the-mill hamburger patties. I had been contemplating meat loaf with it, but wasn’t quite sure what variation to go with, that is, until last night when I saw Kent! I instantly thought of Cowboy Meat Loaf, but instead of using potatoes or making a casserole, I thought I’d try it with some cornbread stuffing. Boy, was that a good choice! Just smelling it baking in the oven, I knew it had to be good. Especially topped with some Honey Barbecue Sauce! And you know what? I was right! I served it with a side of mashed potatoes and some honey cornbread … pure comfort food!
Ingredients
* 16 ounces ground beef
* 1 egg
* 1 package of cornbread stuffing
* 1 teaspoon garlic powder
* 1 teaspoon
* 1/3 -1/2 cup sliced canned mushrooms
* 1/2 cup diced onions (optional)
* 1/2 cup honey bbq sauce
Directions
Pre-heat oven to 375º. Prepare stuffing as directed on the package (or you could be really awesome and make your own). Combine the stuffing, ground beef, egg, garlic powder, Lawry’s Seasoning, mushrooms and onions and mix together. Spray a loaf pan with cooking spray. Press the mixture in the pan and brush with a light coat of honey bbq sauce. Place in oven for 1 hour. Remove and brush again with a thick layer of bbq sauce again, place back in oven for 5 minutes.
